Can AI answer menu, allergen and dietary questions for restaurants?
It can draft replies for your staff, but only from your own approved menu and allergen matrix, and a person checks every answer before it reaches a guest. ChatGPT finds the dishes that match the question, lists the allergens your matrix records and flags anything the matrix does not cover for the kitchen. It does not guarantee a dish is safe, because recipes, suppliers and cross-contact change. For a serious allergy, the reply always asks the guest to tell the server when ordering so the kitchen can confirm.
Where the answer comes from

| Guest asks | AI drafts from | Staff or kitchen |
|---|---|---|
| “Which dishes have no nuts?” | Your current allergen matrix | Check the draft against the matrix version and send |
| “Is the risotto vegetarian?” | Recipe card and menu descriptions | Confirm stock and garnish are unchanged |
| “Can you make it gluten free?” | Your approved list of possible changes | Kitchen decides; AI never offers a change not on the list |
| “Is it safe for a severe sesame allergy?” | Standard wording only | Kitchen and manager answer directly; no AI judgement |
| A dish or ingredient not in the matrix | Nothing; it is flagged | Kitchen checks before anyone replies |
A worked example
Guest message (WhatsApp, sample)
Hi, booking for Friday. My son is allergic to tree nuts. What can he eat from the mains?Draft reply from AI (allergen matrix version 14, sample)
Hi, thank you for letting us know before your visit. According to our current allergen information, these mains do not list tree nuts as an ingredient: grilled hammour, chicken machboos and the beef burger without the pesto mayo. Our kitchen handles nuts, so we cannot guarantee there is no cross-contact. Please tell your server about the allergy when you order so the kitchen can confirm each dish on the day.Note for staff
The matrix has no entry for the new lamb special. It is left out of the reply; ask the kitchen before suggesting it.

Why it matters for Dubai restaurants
Guests ask about allergens, vegetarian and vegan options and dietary needs before they book, often by WhatsApp or Instagram and in several languages. Busy staff answering from memory are where mistakes happen. A draft that only uses the written matrix, names its version and leaves gaps visible gives staff a consistent starting point. The same setup can show which questions come up most and which dishes are missing from the matrix, which helps the kitchen keep its allergen information complete.
Guardrails
- Staff check every draft before sending. AI can omit an allergen, misread the matrix or invent a detail, so the reply is never sent unchecked.
- Answers use only your current, dated allergen matrix and approved recipe information. The head chef owns updates, and old versions are withdrawn when the matrix changes.
- Severe allergy questions and anything not covered go to the kitchen and a manager. AI never says a dish is safe.
- Food labelling and allergen rules stay with your food safety process; instructions in a Skill do not guarantee compliance.
- AI does not read your POS, booking system or WhatsApp by itself; any connection needs a separately configured and tested integration.
Common questions
Can AI answer allergen questions for a restaurant?
It can draft replies from your own approved allergen matrix for staff to check and send. It flags anything the matrix does not cover and never says a dish is safe.
What happens with a severe allergy?
The draft uses standard wording and asks the guest to tell the server when ordering. The kitchen and a manager answer directly; AI does not judge the risk.
How is the allergen information kept up to date?
The head chef or food safety lead updates the matrix when recipes or suppliers change. Replies name the matrix version they used, and outdated versions are withdrawn.
Can it answer in the guest's language?
Yes. Staff can get the draft in the guest's language and check it against the original before sending.
